Ingredients
- Blue Cheese - 4.4 oz
- Butter - 2.3 oz
- Bacon - 8 pieces
- Skin-On Chicken Breasts - 4 pieces
- Wheat Flour - 0.5 oz
- Vegetable Oil - 0 fl oz
- Red Grape Juice - 4 fl oz
- Chicken Broth - 6 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Sugar - a pinch
Step by Step guide
Step 1
Place finely chopped cheese and 50 grams of softened butter in a blender and blend well. Spread the mixture onto a sheet of parchment paper or foil and roll it into a long sausage shape. Wrap tightly and refrigerate.
Step 2
Meanwhile, place the chicken breasts between two pieces of plastic wrap and pound them well.
Step 3
Remove the cheese sausage from the refrigerator, unwrap it, and cut it into 4 pieces. Place one piece on each chicken breast and fold them into envelopes. Wrap each envelope in 2 thin slices of bacon and secure with toothpicks.
Step 4
Heat the vegetable oil and remaining butter in a pan and fry the envelopes until cooked through and golden brown. Transfer to a plate.
Step 5
In the same pan, add the flour and mix well, frying for 1 minute, then add the wine and broth. Simmer a bit, breaking up lumps and whisking well. Season with salt and pepper. Bring to a boil, reduce heat, and add the chicken. Cover and simmer for 35 minutes, turning occasionally.
Step 6
Remove the toothpicks from the envelopes, add a pinch of sugar to the sauce, and cook for a few more seconds.
