  • Ground coriander - 1 bunch
  • Orange Bell Peppers - 1 piece
  • Spanish onions - 1 head
  • Skin-On Chicken Breasts - 2 pieces
  • Smoked salt - 1 tablespoon
  • Ground Cumin - a pinch
  • Lime - 4 pieces
  • Olive Oil - to taste
  • Ground Black Pepper - to taste
  • Tortillas - 4 pieces
  • Natural Yogurt - 5 fl oz
  • Cheshire Cheese - 1.8 oz
  • Mild Chili Spice - 1 piece
  • Marinated cherries - 25 pieces
  • Salt - to taste
  • Avocado - 1 piece

Cut the pepper in half, remove the seeds, and slice it thinly. Finely chop the onion. Cut the chicken into strips that are similar in size to the pepper strips.

In a bowl, combine the bell pepper, onion, and chicken with paprika and cumin. Squeeze the juice of half a lime over the mixture, drizzle with olive oil, season with pepper, and mix everything well. Let marinate for 5-10 minutes.

For the salsa: thinly slice half a chili pepper. Coarsely chop half of the cherry tomatoes and two-thirds of a bunch of cilantro. Mix everything in a separate bowl, seasoning with salt and pepper. Squeeze in the juice of 1 lime.

Preheat a grill pan over high heat. Sear the chicken with the vegetables until golden brown (6-8 minutes). It is important to constantly turn the contents of the pan, or else everything will burn.

Make the guacamole: crush the remaining cherry tomatoes on a cutting board, finely chop the other half of the chili pepper and the cilantro (not just the leaves, but also the stems). Cut the avocado in half, scoop out the flesh onto the board with the tomatoes, herbs, and cherry tomatoes, and chop roughly. Season with salt and pepper to taste.

Preheat the tortillas in the oven at 140°F for 5 minutes. Squeeze the juice from the remaining half of the lime over the chicken and vegetables. Grate the cheddar cheese. Fill the tortillas with the chicken and vegetables, guacamole, salsa, yogurt, and cheese. For a large gathering, you can simply place all the ingredients on the table so that everyone can assemble their own fajitas.
