Chicken fillet cutlets with zucchini and onion

Ingredients

  • Chicken fillet - 3 lbs
  • Young zucchini - 10.6 oz
  • Onion - 1 head
  • Chicken Egg - 1 piece
  • Ocean salt - 1 teaspoon
  • Ground Black Pepper - 1 teaspoon
  • Soy Sauce - to taste

Step by Step guide

Step 1

Thoroughly rinse the fillet, remove any fat (if present), and grind it into minced meat (I used a blender, but you can use a meat grinder or food processor — whichever is more convenient for you).

Step 2

Grate the zucchini on a coarse grater and finely chop the onion.

Step 3

Mix the ground chicken, egg, zucchini, onion, salt, and pepper. Knead the mixture well.

Step 4

Heat a non-stick skillet over high heat.

Step 5

Form small cutlets and fry them in a dry skillet (without oil!) for 1 minute on each side.

Step 6

Transfer all the cutlets to another skillet, pour in a mixture of water and soy sauce until halfway up, and simmer for about 15 minutes under a closed lid over medium heat.
