Ingredients
- Chicken fillet - 17.6 oz
- Garlic - 3 cloves
- Grated Ginger Root - 1.8 oz
- Soy Sauce - 1 fl oz
- Mirin - 1 fl oz
- Rice Vinegar for Sushi - 1 fl oz
- Brown Sugar - 2 tablespoons
- Corn Starch - ½ teaspoon
- Water - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 4 tablespoons
- TABASCO® - to taste
Step by Step guide
Step 1
Cut the fillet into small bite-sized cubes, place them in a colander, and let any excess moisture drain off.
Step 2
Finely chop the garlic and ginger and sauté them in half of the vegetable oil. Pour in the soy sauce, mirin, rice vinegar, add the sugar and hot sauce. Reduce the mixture by one third.
Step 3
Mix the cornstarch with water and add it to the sauce, stirring continuously to achieve a jelly-like consistency.
Step 4
In a wok, heat the remaining oil and quickly stir-fry the chicken so that it remains juicy but develops a nice crust.
Step 5
Pour the prepared sauce into the wok and remove the chicken from the heat.
