  • Chicken fillet - 4 pieces
  • Garlic - 4 cloves
  • Walnuts - 1.8 oz
  • Mayonnaise - 4 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Grated Pecorino Pepato Cheese - 4 tablespoons
  • Meyer Lemon Juice - 4 teaspoons
  • Herbs - to taste

Step by Step guide

Step 1

Boil the mushrooms, pound the chicken fillet with the blunt end of a knife, season with salt and pepper, and drizzle with lemon juice.

Step 2

Finely chop the champignons, herbs, and walnuts. Mix with 3 tablespoons of mayonnaise, season with salt, and stir.

Step 3

Place the filling on the chicken fillet, roll it up, tie with string, and brush with mayonnaise.

Step 4

Place on a baking sheet and bake at 356°F for 45 minutes.
