Ingredients
- Chicken gizzards - 17.6 oz
- Sour Cream - 5.3 oz
- Onion - 3 pieces
- Vegetable Oil - 0 fl oz
- Khmeli-suneli - 1 teaspoon
- Bay leaf - to taste
- Green peppercorns - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Rinse the chicken gizzards well, removing any membranes and fat.
Step 3
Boil in salted water with bay leaf and black peppercorns for 30–40 minutes until tender.
Step 4
Reserve some of the broth used for boiling the gizzards for the sour cream sauce.
Step 5
Slice the boiled gizzards lengthwise into thin pieces.
Step 6
Heat vegetable oil in a pan and sauté the meat for 2 minutes.
Step 7
Slice the onion into thin half-rings.
Step 8
Add the onion to the pan with the meat.
Step 9
Stir and simmer covered for 5–7 minutes.
Step 10
Add 1 teaspoon of khmeli-suneli spice mix.
Step 11
Add sour cream and a cup of broth.
Step 12
Simmer on low heat covered for 10 minutes. Season with salt to taste at the end of cooking.
Step 13
Serve with a side of boiled pasta or mashed potatoes.
