Chicken Gizzards with Tarragon
Ingredients
- Chicken hearts - 2 lbs
- Chicken Liver - 14.1 oz
- Onion - 6 pieces
- Cilantro - to taste
- Tarragon - to taste
- Pomegranate Seeds - to taste
- Vegetable Oil - 2 tablespoons
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cleaned and thoroughly washed chicken hearts are boiled in boiling water for about five to ten minutes and then cut in half.
Step 2
Finely chop the onion and sauté it in butter or vegetable oil until it becomes translucent.
Step 3
Add the hearts to the onion and sauté together for about five to six minutes over medium heat. When the hearts are almost ready, add the liver to the pan, mix, and sauté for another five to seven minutes. It is important not to overcook the liver, or it will become too tough.
Step 4
Season with salt and pepper, add finely chopped tarragon and cilantro, and keep on the heat for another couple of minutes. Then transfer to a plate and sprinkle with pomegranate seeds.
