Description

Not just a recipe, but a celebration. The boiled chicken will spend the night in a thick mixture of sherry and brandy.

Ingredients

  • Poultry - 4 lbs
  • Potato - 2 lbs
  • Dark Ale - 17 fl oz
  • Chicken Egg - 2 pieces
  • Rye Bread - 3.5 oz
  • Garlic - 2 cloves
  • Butter - 3.5 oz
  • Milk - 7 fl oz
  • Unrefined Sunflower Oil - 1 fl oz
  • Thyme - 6 stalks
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Mix room temperature butter with crushed garlic, thyme leaves, a pinch of salt, and pepper.

Step 2

Carefully slide the butter under the skin of the chicken breast, taking care not to tear the skin. Season the chicken all over with salt and pepper, then place it in a deep, but not too wide, baking dish to minimize the space around the bird.

Step 3

Place the chicken in the oven and roast at 356°F. After 10 minutes, pour a small amount of beer over the bird. Continue doing this every 10 minutes until the chicken is cooked through and the beer is finished.

Step 4

Toast the black bread and grind the croutons into fine crumbs using a blender. Boil the potatoes in salted water, then drain the water from the pot and add milk, eggs, and sunflower oil instead. Mash the potatoes and stir in the ground croutons. Serve the mashed potatoes with roasted chicken.
