Chicken in Egg-Potato Batter
Ingredients
- Ground Black Pepper - 1 teaspoon
- Poultry - 1½ kg
- Saffron - ½ teaspoon
- Onion - 2 pieces
- Cinnamon - 1 piece
- Butter - 5.3 oz
- Parsley - 0.7 oz
- Vegetable Oil - 5 fl oz
- Meyer Lemon Juice - ½ cup
- Salad Potatoes - 4 pieces
- Farm fresh eggs - 8 pieces
- Red Long Chili Peppers - ½ teaspoon
- Black Cumin (Cumin) - ½ teaspoon
- Ground Cinnamon - ½ teaspoon
- Lemon - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Place the whole chicken, or better yet, cut into portions, in a roasting pan.
Step 2
Add 50 grams of butter, grated onion, a cinnamon stick, saffron, 3 tablespoons of water, black pepper, peeled potatoes, and salt to the chicken. Simmer everything covered over medium heat, occasionally turning the chicken.
Step 3
Once the potatoes are fully cooked, remove them and mash.
Step 4
Add eggs, parsley, ground cinnamon, cumin, sweet ground pepper, and salt to the mashed potatoes. Mix everything well.
Step 5
Coat the cooked chicken in the batter and fry in a mixture of butter and vegetable oil. Make pancakes from the remaining batter.
Step 6
Add parsley and lemon juice to the broth where the chicken was stewed. Bring the sauce to a boil. You can enrich it with butter.
Step 7
Place the fried chicken in the center of a plate, arrange the pancakes around it, and drizzle with the sauce on top.
