Ingredients
- Chicken Drumstick - 2 lbs
- Chickpea - 1 glass
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Herbs - 1 bunch
- Olive Oil - 3 spoons
- Salt - to taste
- Italian chopped parsley - to taste
Step by Step guide
Step 1
Soak the chickpeas overnight for 10–12 hours.
Step 2
Cook the soaked chickpeas for 60 to 90 minutes, adding bay leaves and whole black pepper.
Step 3
Place the chopped drumsticks in a baking dish, and season with oil and spices.
Step 4
In a deep bowl, combine the cooked chickpeas, tomatoes, and herbs, then add a little more spices and a spoonful of oil, and mix well.
Step 5
Pour the chickpea and vegetable mixture over the chicken drumsticks and thighs, season with salt and pepper to taste, and bake in a preheated oven at 392°F until the chicken is cooked through. It's best to cover the dish with foil to prevent drying out.
