Ingredients
- Poultry - 1 piece
- Walnuts - 12.3 oz
- Onion - 3 heads
- Garlic - 4 cloves
- Clarified Butter - 2.5 oz
- Adjika - 1 tablespoon
- Cilantro - 1 bunch
- Mixed spices for Christmas pudding - 1 teaspoon
- Black Pomegranate Molasses - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the chicken into serving pieces, place in a pot, cover with cold water, bring to a boil, add salt, and simmer on low heat for 40–60 minutes until cooked. Skim the foam from the broth as it cooks.
Step 2
In a cast-iron pot, heat the clarified butter and transfer the pieces of boiled chicken into it.
Step 3
Chop the onion, mix it with adjika, and add it to the chicken, simmering on low heat for 10 minutes.
Step 4
Pass the walnuts through a meat grinder twice. Crush the garlic with salt and herbs, mix with the walnuts, and add 3 cups of warm chicken broth.
Step 5
Pour the walnut sauce into the pot with the chicken and simmer for another 10 minutes. A few minutes before finishing, add the pomegranate juice. Serve immediately.
