Chicken Kiev with Herb Butter
Ingredients
- Butter - 3.5 oz
- Chicken fillet - 4 pieces
- Herbs - 1.8 oz
- Wheat Flour - 3.5 oz
- Breadcrumbs - 3.5 oz
- Vegetable Oil - 3 fl oz
Step by Step guide
Step 1
Prepare the herb butter in advance: mix the butter with chopped parsley (it really lacks aroma in these foreign lands). Wrap in foil and place in the refrigerator.
Step 2
Pound the chicken fillets on a sheet of plastic wrap laid out on a cutting board, season with pepper and salt. Leave on the wrap — it's easier to wrap.
Step 3
Place a stick of herb butter on each pounded piece of chicken, wrap it like a long envelope so that the butter does not leak out.
Step 4
Set up three plates: one with lightly beaten 3–4 eggs, another with flour (in our case, gluten-free), and the third with breadcrumbs (I make my own from stale bread, today I will use something gluten-free again). The result is unpredictable :-)
Step 5
Fry on all sides until golden brown, carefully flipping. Try not to touch the cutlets with sharp objects — the juice will leak out immediately.
Step 6
Serve with lemon and mashed potatoes. A green salad and a glass of chilled white wine are a must!
