Chicken Liver in Red Wine

Ingredients

  • Chicken Liver - 17.6 oz
  • Onion - 4 pieces
  • Tomatoes - 2 pieces
  • Wheat Flour - 0.7 oz
  • Paprika - 2 tablespoons
  • Mild Chili Spice - ½ teaspoon
  • Soy Sauce - 3 tablespoons
  • Rice Sweet Wine - 1 cup
  • Olive Oil - 1 fl oz

Step by Step guide

Step 1

Peel the onion, slice it into half rings, and sauté in olive oil until cooked. Remove from the pan and set aside.

Step 2

Rinse the liver, sort it, and remove all membranes and fat. Allow to drain.

Step 3

Mix the flour, paprika, and chili pepper. Dredge the liver in this mixture.

Step 4

Quickly fry the liver until golden brown.

Step 5

Blanch the tomatoes, remove the skin, and puree in a blender or mash.

Step 6

Add the tomato puree, red wine, and soy sauce to the liver, mix well, and simmer covered over medium heat for 10 minutes. Then add the onion and simmer for another 10 minutes, stirring occasionally.

Step 7

Check for salt, and season if necessary.

Step 8

Serve with a side dish.
