Chicken Meatballs with Mozzarella
Ingredients
- Egg white - 2 pieces
- Ground meat - 2 lbs
- Dried Rosemary - 1 teaspoon
- Breadcrumbs - 4 tablespoons
- Garlic - 2 cloves
- Grated Pecorino Pepato Cheese - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Pizza Mozzarella Cheese - 24 pieces
- Wheat Flour - 5 tablespoons
- Onion - 1 piece
- Fresh basil leaves - ½ teaspoon
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Sugar - to taste
Step by Step guide
Step 1
Place the ground chicken in a bowl. Add grated garlic and Parmesan, eggs, breadcrumbs, oregano, salt, and pepper to taste.
Step 2
Mix well. Divide the mixture into 24 portions. Shape each portion into a patty, placing a ball of mozzarella in the center. Fold the edges over the cheese and form a round meatball.
Step 3
Roll each meatball in flour. Repeat the same with the remaining mixture and cheese.
Step 4
In a skillet, heat 2 tablespoons of vegetable oil over high heat. Fry the meatballs on all sides until golden brown. Transfer to a baking sheet and place in a preheated oven at 356°F for 15 minutes.
Step 5
While the meatballs are cooking, prepare the sauce. Finely chop the onion and garlic. In a skillet over medium heat, heat 1 tablespoon of vegetable oil. Add the onion and sauté, stirring, for 5 minutes. Add the garlic and oregano, and sauté, stirring, for another minute. Add the crushed tomatoes along with their juice, bring to a boil, and simmer uncovered for 10 minutes. Add salt and sugar to taste.
Step 6
Serve the meatballs with the sauce. Rice makes an excellent side dish.
