Ingredients
- Ground meat - 14.1 oz
- Dried Chinese mushrooms - 1 piece
- Corn Starch - 2 teaspoons
- Chicken Egg - 1 piece
- Grated Ginger Root - 1 teaspoon
- Sake - 1 tablespoon
- Salt - to taste
- Sugar - 1 tablespoon
- Spinach - 3.5 oz
- Mirin - 1 tablespoon
- Dashi powder - 2 cups
Step by Step guide
Step 1
Soak the shiitake mushrooms in warm water with 1 teaspoon of sugar for 15–20 minutes. Rinse with cold water, squeeze out excess water, and chop.
Step 2
Mix the ground chicken with the egg, cornstarch, and mushroom mixture. Add ginger, salt, sake, and the remaining sugar. Mix again and form small meatballs.
Step 3
Blanch the spinach in boiling water and chop it.
Step 4
Combine the dashi and mirin with salt and sugar, and bring to a boil while stirring. Add the meatballs to the sauce and simmer on low heat until cooked through. Then remove the meatballs, add the spinach leaves to the broth, and simmer for 1–2 minutes.
Step 5
Serve the meatballs with the sauce.
