Description

*Instead of olive oil, you can use sunflower oil or mayonnaise. *If the chicken is not fully cooked but starts to burn on top, cover the top with foil. *If you have time, you can marinate the chicken in the spices for 1–2 hours before cooking. *The meat of the chicken in this recipe turns out very tender and juicy.

Ingredients

  • Garlic - 3 cloves
  • Poultry - 1 piece
  • Salt - ½ spoons
  • Ground Black Pepper - 0,2 teaspoons
  • Bay leaf - 2 pieces
  • Green peppercorns - 4 pieces
  • Lemon - ½ pieces
  • Olive Oil - 1 tablespoon

Step by Step guide

Step 1

Wash the chicken and pat it dry with paper towels or a kitchen towel.

Step 2

Rub the chicken thoroughly inside and out with salt, ground pepper, and olive oil.

Step 3

Slice the garlic cloves and make incisions in the chicken skin, then insert the garlic slices under the skin.

Step 4

Pour 1/3 to 1/2 of water into a glass bottle (you can use a beer bottle or any glass bottle with a capacity of about 0.5 liters, preferably with a bottom and neck that are wider than those of a standard bottle; you can also use a simple 0.7-liter glass jar).

Step 5

Place a bay leaf, whole peppercorns, and lemon slices into a bottle of water.

Step 6

Place the chicken on top of the bottle.

Step 7

You can tuck the chicken wings under the body to prevent them from burning by making slits in the armpits.

Step 8

Place the bottle with the chicken in a skillet or another metal container filled with water, so that the fat can drip into the water while roasting (otherwise, the fat will burn and dirty the oven).

Step 9

Place the chicken in a cold oven on the lowest rack or at a level where the chicken does not touch the top of the oven.

Step 10

Bake the chicken at 356°F for about 1.5 hours (depending on the weight of the chicken).

Step 11

The chicken's doneness is checked by piercing it. If clear juices run out, the chicken is ready. If the juices are cloudy and red, continue cooking.
