However, since the frying will be quick and gentle, it is highly recommended to prepare the piccata in good olive oil – this way, the flavor will be much richer.

- Chicken fillet - 2 pieces
- Wheat Flour - 2.1 oz
- Olive Oil - 1 fl oz
- Garlic - 4 cloves
- Dry White Wine - 2 fl oz
- Capers - 1 tablespoon
- Butter - 1.8 oz
- Meyer Lemon Juice - 1 fl oz
- Parsley - 2 sprigs
- Lemon - ½ pieces
- Salt - to taste
Step by Step guide
Step 1
Slice the chicken breasts in half horizontally and gently pound them to achieve an even thickness of about 1 cm. Lightly season with salt.
Step 2
Coat each piece of chicken breast in flour and shake off the excess.
Step 3
In a large skillet, heat the oil and sauté the meat for 2 minutes on one side, until the pieces are browned.
Step 4
Flip the meat and cook for another 30 seconds. Transfer the browned meat to a clean plate.
Step 5
Crush the garlic cloves with the flat side of a knife.
Step 6
Add a little oil to the pan and sauté the garlic, stirring constantly, until it turns golden brown. It's important not to let the garlic burn. This will take about 2 minutes.

Pour in the wine, add the capers, and cook, stirring, for 3 minutes, until the liquid has almost completely evaporated.

Pour in the water, add the butter, and cook, stirring vigorously until an emulsion forms, for about a minute.

Return the chicken to the skillet and heat for 2–3 minutes.

Add lemon juice and season with salt to taste.

Transfer the chicken with the sauce to serving plates, sprinkle with chopped parsley, and add lemon wedges on the side. Serve immediately.
