Ingredients
- Olive Oil - 2 tablespoons
- Onion - 2 heads
- Semi-Smoked Sausage - 3.5 oz
- Chicken fillet - 4 pieces
- Basmati rice - 10.6 oz
- Marinated cherries - 14.1 oz
- Chicken Broth - 20 fl oz
- Fresh Mushrooms - 8.8 oz
- Fresh basil leaves - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Heat the olive oil in a fireproof pot (about 3 liters) with a lid. Add finely chopped onion and bacon and sauté for 7-8 minutes until soft and golden.
Step 3
Push the bacon and onion to one side and add the diced chicken fillet. Sauté until golden brown for 3-4 minutes. Add the rice and mix everything well.
Step 4
Pour in the broth and add the chopped tomatoes and thinly sliced mushrooms. Season with salt and pepper.
Step 5
Bring to a boil, cover with a lid, and transfer to the oven for 30-35 minutes, until the rice is cooked and the liquid is fully evaporated. Stir in the finely chopped basil, sprinkle with cheese, and serve.
