Chicken roll baked under carbonade with mint

Ingredients

  • Morels - 4 pieces
  • Chicken fillet - 2 pieces
  • Potato - 1 piece
  • Cheese Spread - 3.5 oz
  • Dried Dill Stems - 0.4 oz
  • Carbonade - 3.5 oz
  • Scallions - 2 pieces
  • Lemon - 1 slice

Step by Step guide

Step 1

Pound the fillet, place it on plastic wrap, with two fillets side by side, so you can roll it later. Season with dill, salt, pepper, and you can add paprika or cayenne pepper if you like it spicy.

Step 2

Chop the mushrooms, tomato, and onion, and spread them over the fillet, flattening them a bit. Top with cheese. Now roll the fillet, using the plastic wrap to help. Transfer it to a baking sheet lined with parchment paper.

Step 3

Lay thinly sliced carbonade on top of the roll, and place a slice of lemon on top. If you have a couple of mint sprigs, place them on top of the roll and on the sides.

Step 4

Bake at 200°C for 35 minutes.

Step 5

When serving, remove the mint, and drizzle the roll with the lemon that was baked on top.
