Ingredients
- Orange Bell Peppers - 2 pieces
- Chicken fillet - 4 pieces
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Prosciutto - 2.1 oz
- Butter - 1 teaspoon
- Melted Cheese - 4.2 oz
Step by Step guide
Step 1
Roast the peppers in the oven or on the grill until the skin is charred. Transfer to a bowl, cover with plastic wrap, and let sit for 15 minutes. Then cut in half lengthwise, peel off the skin, and remove the seeds.
Step 2
Meanwhile, preheat the oven to 392°F.
Step 3
Thinly pound the chicken breasts with a meat mallet and place them on a work surface. Season with salt and pepper. On top of the breasts, layer slices of prosciutto, then arrange the pepper halves and sliced mozzarella. Roll tightly into logs and place seam-side down on parchment paper. Fold the parchment into an envelope and place on a baking sheet.

Bake in the oven for 30 minutes until cooked through.

Carefully open the envelopes, transfer to plates, and drizzle with the juices.
