Chicken Salad with Apples, Celery, and Thyme

Ingredients

  • Poultry - 10.6 oz
  • Butter - 1.8 oz
  • Apple - 10.6 oz
  • Calvados - 4 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Mustard Greens - 2 tablespoons
  • Shallot - 3.5 oz
  • Thyme - to taste
  • Celery salt - 3.5 oz
  • Green Butter - 3.5 oz
  • Herbs - 1.8 oz

Step by Step guide

Step 1

Slice the chicken breast and sauté it in butter. Add the Calvados 5 minutes before it's done.

Step 2

In a small pot or skillet, melt the butter, add mustard, sugar, salt, and pepper. Add coarsely chopped apples, shallot, celery, thyme, and sauté for 10 minutes until soft, without browning.

Step 3

Wash and dry the lettuce leaves.

Step 4

Combine all ingredients and sprinkle the salad with chopped herbs.
