Ingredients
- Farro - 4.2 oz
- Olive Oil - 1 fl oz
- Skin-On Chicken Breasts - 8.5 oz
- Scallions - 3 pieces
- Chinese green beans - 12.7 oz
- Sweet Corn Sticks - 8.5 oz
- Oregano - 1 tablespoon
- Ocean salt - ½ teaspoon
- Shallot - 1 head
- Champagne Vinegar - 2 tablespoons
- Mustard Greens - 0 teaspoons
- Goat cheese - 4.2 oz
Step by Step guide
Step 1
Cook the farro in salted boiling water, then drain and let the grains cool.
Step 2
Heat a tablespoon of olive oil in a small saucepan over medium heat. Clean the chicken breasts, cut them in half, and season with salt and pepper. Add the chicken to the saucepan with the oil and cook until golden brown for 8 minutes on each side. Cool the breasts and cut into 1.5 cm cubes.
Step 3
Prepare the green beans in boiling salted water until tender-crisp, about 4 minutes. Drain and rinse the beans with cold water, then dry them on a kitchen towel.
Step 4
In a large bowl, combine the farro, chicken, and beans, then add the corn and thinly sliced green onions.
Step 5
Mix the remaining 2 tablespoons of oil, oregano, and ½ teaspoon of salt in a small bowl. Mash everything with a spoon until fragrant, then add the wine vinegar, shallot, and mustard. Next, add the salad to the bowl, season with salt and pepper, and toss, crumbling the goat cheese on top. Serve the salad chilled.
