Ingredients
- Rice Vinegar for Sushi - ¼ cup
- Soy Sauce - 2 tablespoons
- Honey - 1 tablespoon
- Peanut Butter - 2 tablespoons
- Black sesame seeds - ¾ teaspoon
- Watermelon - 3 pieces
- Cantaloupe - 3 pieces
- Daikon - 14.1 oz
- English cucumber - 7.1 oz
- Scallions - 2 bunches
- Chicken fillet - 2 pieces
- Chopped Green Onions - 0.7 oz
- Chopped almonds - 2 tablespoons
Step by Step guide
Step 1
Preheat the grill or barbecue. Season the chicken breasts with salt and pepper and place them on an oiled grill rack. Grill for about 4-5 minutes on each side until cooked through. Transfer to a plate and let cool. Cut into small pieces.
Step 2
In a large bowl, mix the vinegar, soy sauce, peanut butter, honey, and sesame oil until smooth. Add the thinly sliced melons, thinly sliced daikon, thinly sliced cucumber, and finely chopped green onions. Mix well.
Step 3
Place 2 cups of salad on each plate, top with chicken, and sprinkle with cilantro and chopped walnuts.
