Ingredients
- Skin-On Chicken Breasts - 1 piece
- Lime Juice - 2 tablespoons
- Cucumbers - 4 pieces
- Fresh Mint - 1 stem
- Soy Sauce - 2 tablespoons
- Brown Sugar - 1 tablespoon
- Green peppercorns - 3 pieces
- Olive Oil - 1 tablespoon
- Salt - to taste
- Mild Chili Spice - to taste
Step by Step guide
Step 1
Cut the cucumbers into long thin strips (a vegetable peeler works well for this).
Step 2
Boil the chicken meat and shred it into long fibers. Add to the cucumbers.
Step 3
In a mortar, grind the black pepper, sugar, and salt.
Step 4
Add finely chopped chili pepper, chopped mint, lime juice, soy sauce, and sesame oil to the pepper and sugar mixture. Mix well.
Step 5
Dress the salad and toss to combine.
