Chicken Salad with Sweet and Bitter Dressing
Ingredients
- Cucumbers - 1 piece
- Carrot - 1 piece
- Hazelnut - 6 pieces
- Honey - 1 tablespoon
- Garlic - 1 clove
- Olive Oil - 5 tablespoons
- Chicken fillet - 2 pieces
- English Dry Mustard - ½ teaspoon
- Lime - 1 piece
- Spices - to taste
Step by Step guide
Step 1
Coat the chicken in spices (I used Italian herbs), add the garlic that was used for the dressing, wrap in foil, and bake for 30–40 minutes at 392°F.
Step 2
Cut the carrot into rectangles, drizzle with lime or lemon juice, and sprinkle with salt and pepper. Slice the cucumber into half-moons.
Step 3
For the dressing, heat the olive oil until it sizzles, remove from heat, add the garlic for half a minute, then add a quarter teaspoon of mustard powder, and half a teaspoon of honey, mix and let cool.
Step 4
Combine all the ingredients and top with crushed hazelnuts.
