Description
"Satsabeli" translates from Georgian simply as "sauce"; this dressing is a staple in Georgian cuisine. It is made only from the ripest sweet seasonal tomatoes. Satsabeli is often served not only as a side dish but is also used to braise meat and poultry. The acidity found in tomatoes effectively softens the fibers and connective tissues, making it easier to work with even the toughest cuts of meat. Additionally, the inclusion of grapes in the tomato mixture elevates the flavor and presentation of ordinary broiler drumsticks significantly.
Ingredients
- Onion - 1 head
- Tomatoes - 5 pieces
- Olive Oil - 1 fl oz
- Seedless Green Grapes - 7.1 oz
- Garlic - 3 cloves
- Walnuts - 3.5 oz
- Cilantro - 1 bunch
- Adjika - 1 teaspoon
- Chicken Drumstick - 6 pieces
- Chicken Thighs - 6 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel and finely chop the onion. Dice the tomatoes into small cubes.
Step 3
Blend the grapes in a blender.
Step 4
Pass the grape puree through a sieve to remove the skins.
Step 5
Heat the olive oil in a skillet, add the onion, and add the crushed garlic, sautéing until golden brown.

Add the tomatoes and grape juice. Simmer for 15 minutes, stirring constantly.

Add the chopped walnuts, chopped cilantro (saving some for garnish), and adjika. Mix and remove the sauce from heat.

Season the chicken with salt and pepper, and fry on all sides until golden brown.

Place the chicken in a heatproof dish, pour the sauce over it, and bake in a preheated oven at 356°F for 40-50 minutes until cooked through.

Garnish the satsabeli with cilantro leaves and serve.
