Ingredients
- Onion - 3 heads
- Poultry - 2 lbs
- Pears - 2 pieces
- Turnips - 3 pieces
- Raisins - 10.6 oz
- Butter - 1.8 oz
- Wheat Flour - 5.3 oz
- Vegetable Oil - 1 fl oz
- Rice Sweet Wine - 17 fl oz
- Lemon - 1 piece
- Salt - to taste
- Paprika - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
In a skillet, melt the butter. Dredge the pieces of cut chicken in flour and place them in the skillet. Sauté on both sides until lightly golden and remove from the skillet.
Step 2
Peel the pears, remove the cores, and slice them.
Step 3
In the remaining mixture of oil and chicken juices, sauté the finely chopped onion and julienned carrots, adding salt, paprika, and black pepper.
Step 4
Once the vegetables are sautéed, place the chicken pieces on top, starting with the thickest ones. Layer the pears and raisins on top. Pour in the wine. Sprinkle a small amount of lemon zest on top. Keep on the heat for a little while and serve.
