Description
To simplify the task, you can buy ready-made garlic sauce at the store, just like the seasoning for chicken. However, homemade is always tastier and healthier.
Ingredients
- Skin-On Chicken Breasts - 17.6 oz
- Red Curry Powder - 2 tablespoons
- Garlic - 2 heads
- Salt - to taste
- Ground Black Pepper - to taste
- Chocolate eggs - 4 pieces
- Breadcrumbs - 10.6 oz
- Olive Oil - to taste
- Salad Potatoes - 8.8 oz
- Milk - 1 cup
- Butter - 0 oz
- Arugula - 0 oz
- Chopped Sage Leaves - 1 tablespoon
- Sour Cream - 7.1 oz
- Pickles - 0.1 oz
Step by Step guide
Step 1
Prepare the chicken seasoning. Crush 3 cloves of garlic in a garlic press, mix with curry powder, salt, and pepper.
Step 2
Take the chicken breasts and cut them into thin slices about half a centimeter wide with a sharp knife. Make sure the pieces are clean and free from blood and veins. You will get about 2–3 schnitzels from one breast. It's better to cut towards yourself while holding the top piece of chicken. It's advisable to tenderize the pieces.
Step 3
Rub each piece with the prepared seasoning.
Step 4
Beat the raw eggs in a bowl until smooth. You can add any leftover seasoning or one of its ingredients, such as curry.
Step 5
Coat each piece first in the eggs, then in the breadcrumbs. Ensure that the breadcrumbs evenly cover the chicken.
Step 6
Place the pieces in a frying pan with olive oil. While they fry to a golden brown, you can drizzle them with more olive oil to make the schnitzels juicier.
Step 7
Prepare the mashed potatoes. Place the peeled potatoes in salted boiling water and cook until very soft.
Step 8
Drain the water, add a piece of butter, pour in the milk, add salt, a bit of basil, arugula, and garlic to the pot with the cooked potatoes. Blend the mixture until smooth. Note: Do not add too much arugula to the mash, or it will become bitter. The blended mash will have a slightly rubbery consistency, which pairs particularly well with chicken schnitzels.
Step 9
Prepare the garlic sauce from sour cream, finely chopped pickles, and garlic. Mix all these ingredients thoroughly and serve with the schnitzels and mashed potatoes.
