Ingredients
- Skin-On Chicken Breasts - 2 lbs
- Bacon - 8.8 oz
- Leek - 1 stalk
- Juniper Berries - 2 pieces
- Paprika - to taste
- Salt - to taste
Step by Step guide
Step 1
Place the bacon in the freezer for 15 minutes. Then, if it's a whole piece, cut it into thin strips about 5 cm wide.
Step 2
Crush the juniper berries in a mortar. Sprinkle the crushed juniper over the bacon.
Step 3
Wash the leek, dry it, cut it in half lengthwise, place the leaves in boiling water for 2 minutes, and dry with a towel.
Step 4
Wash the chicken breast, dry it, cut it into cubes with a side of 3 cm, and season with salt and paprika.
Step 5
Wrap each piece of chicken with a leaf of leek, then with bacon.
Step 6
Thread four rolls onto a thin skewer or wooden stick.
Step 7
Grill over charcoal, turning constantly, until cooked through (8–10 minutes).
Step 8
Serve with herbs and sauces.
