Chicken Skewers with Prunes

Ingredients

  • Chicken fillet - 2 pieces
  • Salted pork belly - 5.3 oz
  • Dried Yellow Plums - 5.3 oz
  • Soy Sauce - 3 fl oz
  • Garlic - 5 cloves
  • Chicken Seasoning - to taste
  • Ground Black Pepper - to taste
  • Lemon - 1 piece

Step by Step guide

Step 1

Cut the chicken fillet into cubes of 2–3 cm. Place in a deep bowl. Add minced garlic, chicken seasoning, and pepper (to taste). Pour in the soy sauce, squeeze in the lemon juice, mix well, and let marinate for about 15–20 minutes.

Step 2

Soak the prunes in boiling water for 5 minutes.

Step 3

Cut the fat into slices 2–3 mm thick, so they match the size of the chicken pieces. If the fat has skin, it should be removed.

Step 4

Thread the skewers, alternating pieces of chicken, prunes, and slices of fat.

Step 5

Melt a few pieces of fat in a skillet to prevent the skewers from burning. It is preferable to use a non-stick skillet.

Step 6

Place the skewers in the skillet and fry for 5–6 minutes on each side. Do not fry them for too long, otherwise they will become dry and tough.
