Chicken Skewers with Sesame, Soy Sauce, and Lime
Ingredients
- Skin-On Chicken Breasts - 7.9 oz
- Red Long Chili Peppers - 1 piece
- Courgette - 1 piece
- Lime - 1 piece
- Spanish onions - 1 head
- Soy Sauce - 2 tablespoons
- Sesame Oil - 1 tablespoon
- Orange zest - ½ piece
- Brown Sugar - a pinch
- Basmati rice - 3.5 oz
Step by Step guide
Step 1
Preheat the grill pan. Meanwhile, cut the chicken breast into small cubes and place them in a bowl along with the chopped red pepper, zucchini, and onion. Add the lime juice, soy sauce, orange juice, sesame oil, and sugar. Mix well and thread the meat and vegetables alternately onto 6 bamboo skewers.
Step 2
Place the skewers on the pan and grill for 1 minute on each side, then reduce the heat and cook for another minute until the vegetables are tender and the chicken is cooked through.
Step 3
Meanwhile, pour the remaining marinade into a small pan and simmer for 5 minutes until the sauce reduces nicely.
Step 4
Cook the rice in boiling water until tender. Drain and divide onto 2 plates, placing the chicken skewers alongside. Drizzle with sauce and serve.
