Ingredients
- Lemon - 1 piece
- Skin-On Chicken Breasts - 24.7 oz
- Rosemary - 2 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
- Courgette - 2 pieces
- Olive Oil - 1 fl oz
Step by Step guide
Step 1
Soak 20 wooden skewers in water for 30 minutes.
Step 2
Mix olive oil, lemon zest and juice, rosemary, and season. Cut the chicken into small pieces.
Step 3
Preheat the grill. Use a vegetable peeler to slice thin strips from the zucchini and thread the ribbons and chicken onto the prepared skewers. Place on a baking sheet and brush with half of the oil and lemon mixture.
Step 4
Place the skewers under the hot grill for 3-4 minutes or until the chicken is fully cooked. Turn while grilling. Serve on a plate, drizzled with the remaining oil.
