Ingredients

  • Skin-On Chicken Breasts - 17.6 oz
  • Courgette - 1 piece
  • Spanish onions - 1 head
  • Olive Oil - 2 tablespoons
  • Dried Rosemary - 1 teaspoon
  • Red Wine Vinegar - 2 tablespoons
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut the chicken, zucchini, and onion into small pieces.

Step 2

In a bowl, mix olive oil, oregano, vinegar, and a bit of salt and pepper. Pour into a bag.

Step 3

Add the chicken, zucchini, and onion to the marinade. Mix well, seal, and let sit for 30 minutes or refrigerate overnight.

Step 4

Preheat the grill or barbecue.

Step 5

Thread the chicken pieces, zucchini, and onion onto skewers, alternating them. Place on the grill and cook for about 12–14 minutes until done. Serve with feta sauce (see note).
