Ingredients
- Poultry - 1 piece
- Potato - 10.6 oz
- Garlic - 4 cloves
- Sweet Red Onion - 2 heads
- Tomatoes - 4 pieces
- Sweet Pepper - 1 piece
- Olive Oil - 3 spoons
- Salt - to taste
- Ground Black Pepper - to taste
- Thyme - to taste
Step by Step guide
Step 1
Cut the potatoes, tomatoes, bell peppers, and other vegetables in half, into slices, or leave them whole (if they are not too large), according to your preference. You can also add one whole chili pepper.
Step 2
Place the vegetables in a large bowl, drizzle with olive oil, and season with salt and pepper. Mix well and let them sit for a while (while you prepare the chicken).
Step 3
Cut the chicken into pieces, season with salt and pepper. Sauté in a skillet until golden brown.
Step 4
Preheat the oven to 356°F. Place the vegetables in a large roasting pan or ovenproof dish. Arrange the pieces of chicken on top and bake until cooked through, about 40 to 50 minutes.
Step 5
Serve garnished with fresh herbs.
