Chicken stewed in coconut milk with lime and garlic
Ingredients
- Chicken fillet - 15.9 oz
- Enoki mushrooms - 5.3 oz
- Coconut Milk - 2 fl oz
- Garlic - 7 cloves
- Grated Ginger Root - 2.1 oz
- Lime - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the garlic.
Step 2
Crush a portion of the garlic with a chef's knife or something heavy.
Step 3
Coarsely chop the second part of the garlic.
Step 4
Peel the ginger.
Step 5
Crush the ginger.
Step 6
Cut the lime in half and remove the seeds.
Step 7
Cut the enoki mushrooms into pieces about 2–3 cm long.
Step 8
Cut the chicken into cubes.
Step 9
Heat olive oil in a skillet.
Step 10
Add ginger and garlic to the hot oil.
Step 11
Flip as soon as one side is golden brown. Remove after 3 minutes. The garlic and ginger have infused their juices into the oil.

Squeeze the juice of half a lime, along with the pulp, into the chicken meat. Mix well.

Add the poultry to the fragrant oil.

After a couple of minutes, flip it over and season with salt.

After a couple more minutes, stir, add the mushrooms, and reduce the heat to medium.

Season with black pepper.

Mix the ingredients.

After a minute, add the garlic.

Stir and reduce the heat to low.

Pour the coconut milk into the skillet. Stir and simmer covered for about 7 minutes.

Add the juice of half a lime along with the pulp. Stir well. Simmer for another minute uncovered.
