Chicken stewed with lentils, dried apricots, and rosemary
Ingredients
- Poultry - 2 lbs
- Paprika - 1 teaspoon
- Chicken Broth - 17 fl oz
- Cinnamon - ½ teaspoon
- Ground coriander - ½ teaspoon
- Rosemary - 2 pieces
- Onion - 1 head
- Dried Apricots - 4.4 oz
- Carrot - 10.6 oz
- Dry White Wine - 10 fl oz
- Lentils - 1 cup
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large non-stick skillet, brown the pieces of chicken in olive oil. Set aside.
Step 2
Add chopped onion, carrot, rosemary, and julienned dried apricots to the skillet. Add paprika, cinnamon, and coriander, and cook, stirring, for 1 minute.
Step 3
Pour in the wine, add the pre-cooked lentils to the skillet, add the pieces of chicken, cover, and bring to a boil. Reduce the heat and simmer until cooked through.
Step 4
Garnish the finished dish with a sprig of rosemary.
