Ingredients
- Pecan - 1 cup
- Cheesecake Mix - 1½ cups
- Salt - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
- Chicken fillet - 18.3 oz
- Buttermilk - ½ cup
- Farm fresh eggs - 2 pieces
- Vegetable Oil - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F. Spread the nuts on a baking sheet and toast for 10 minutes.
Step 2
In a blender, combine the nuts, baking mix, salt, and pepper. Grind until fine. Transfer half of the mixture to a bowl and add the sliced chicken fillet. Mix well.
Step 3
Preheat the oven to 428°F.
Step 4
Mix the lightly beaten eggs and buttermilk. Dip the chicken in this mixture, then coat it in the remaining nut mixture. Place on a baking sheet lined with foil and greased with vegetable oil. Lightly drizzle with vegetable oil and bake in the oven for 20-25 minutes until cooked through and golden brown. Transfer to plates and serve.
