- Chicken Thighs - 2 pieces
- Olive Oil - 1½ tablespoons
- Olive Oil - 1 teaspoon
- Ocean salt - to taste
- Garlic - 1.1 oz
- Ginger - 1.8 oz
- Mild Chili Spice - 0.1 oz
- Chili Flakes - to taste
Step by Step guide
Step 1
Rinse the chicken and pat dry to remove excess moisture.
Step 2
Peel the garlic and ginger. Crush them with a chef's knife.
Step 3
Slice the chili pepper lengthwise, keeping the seeds.
Step 4
Heat both types of oil in a skillet.
Step 5
Sauté the ginger, garlic, and chili for 3–4 minutes, stirring occasionally.
Step 6
Add the chicken thighs and season with salt. Sear for 3–5 minutes over high heat until golden brown.
Step 7
Remove the garlic and ginger from the skillet.
Step 8
Flip the chicken and season with salt. Sear for another 2–3 minutes.
Step 9
Cover with a lid and reduce the heat to medium. Simmer for about 10–12 minutes, reducing the heat further if needed.
Step 10
Remove the lid and sear for another 2–3 minutes, increasing the heat.
Step 11
Transfer to a plate, season with chili flakes, and serve.
