- Sweet Red Onion - 3.5 oz
- Garlic - 2 cloves
- Oranges - 7.1 oz
- Soy Sauce - 2 tablespoons
- Olive Oil - 2 tablespoons
- Duck wings - 2 lbs
Step by Step guide
Step 1
Rinse the wings and pat them dry with paper towels. Place the chicken in a deep bowl. Slice the red onion into thin rings and add it to the chicken. Zest the orange, but not with a grater; instead, use a vegetable peeler to cut thin strips.
Step 2
Grate the garlic or crush it in a mortar, then add the resulting paste to the wings.
Step 3
Squeeze the juice of the orange into the mixture. Add 3 tablespoons of soy sauce and the oil. Mix the marinade well, coating the wings thoroughly.
Step 4
Now let the wings marinate for 30–60 minutes, placing a weight on top. Cover the wings with a flat plate and place something heavy on top, such as a mortar, a jar filled with water, etc. This will allow you to forget about the chicken for a while, ensuring that each wing is well infused with all the juices and aromas from the marinade.
Step 5
Preheat the oven to 392°F. Grease a baking sheet or dish with any vegetable oil (refined sunflower, refined olive, peanut) or line it with parchment paper to prevent the wings from sticking.
Step 6
Place the wings in the dish/baking sheet, put it in the preheated oven at 392°F, and bake for 15–20 minutes, adjusting the cooking time depending on the size of the wings.
Step 7
Serve the wings hot. If desired, just before serving, drizzle them with the juice of half a freshly squeezed lemon and you can grate a little fresh lemon zest on top.
