Ingredients
- Sake - 10 fl oz
- Skin-On Chicken Breasts - 2 pieces
- Soy Sauce - 10 fl oz
- Scallions - 10.6 oz
- Star anise - 3 pieces
- Grated Ginger Root - 5.3 oz
- Oranges - 2 pieces
- Cinnamon - 2 pieces
- Garlic - 2 heads
- Unrefined Sunflower Oil - 17 fl oz
- Cilantro - 1.8 oz
- Mild Chili Spice - 2 pieces
- Oyster Mushrooms - 3 fl oz
Step by Step guide
Step 1
In a large pot with a capacity of 5 to 7 liters, pour in 2 liters of water, soy sauce, and sake (or sherry). Add cinnamon, star anise, green onions, garlic, 100 grams of ginger cut into matchsticks, the peel of an orange, and squeeze in the orange juice. Bring the mixture to a boil, then lower the chicken (with bones and skin) into the pot and simmer for twenty minutes in the boiling water. After that, remove from heat and let it sit in the cooling broth for an hour.
Step 2
After this time, strain the broth, pour about half a liter into a saucepan, add oyster sauce, and place over low heat to reduce until thickened. This should take about fifteen to twenty minutes.
Step 3
Meanwhile, bring vegetable oil to a boil in a pot, then carefully lower the chicken breasts in one by one and fry in the bubbling oil for 5–7 minutes, until the skin is brown and crispy.
Step 4
Remove the fillet from the bone, slice it, sprinkle with finely chopped ginger, cilantro, and chili pepper, and serve with a reduced sauce.
