Description
In Georgia, chicken with blackberries is prepared in the same way as satsivi — pieces of boiled or fried chicken are marinated in a thick aromatic sauce. It is believed that the best sauce is made from freshly picked berries, which should not be washed before cooking, as any water can cause the sauce to sour quickly. As an alternative to fresh berries, freshly frozen ones can be used. If the berries are too firm, they can first be blended in a blender and then strained through a sieve. A delightful addition to the cold chicken in blackberry sauce can be hot gomi (mamaliga) made from cornmeal.

- Garlic - 3 cloves
- Ground coriander - ½ spoons
- Red Long Chili Peppers - 1 tablespoon
- Uchiko Suneli - ½ spoons
- Salt - to taste
Step by Step guide
Step 1
Place a whole chicken weighing just over a kilogram into a pot of boiling, lightly salted water and cook until fully done – this will take about forty minutes. Once the chicken is cooked, transfer it to a serving dish and let it cool.
Step 2
Turn ripe, dried fresh blackberries into a puree using a blender or a food mill, then strain through a sieve to remove the seeds.
Step 3
Crush the garlic in a mortar with salt until it forms a smooth paste. In another mortar, grind the spices: coriander, ucho-suneli, and red pepper. Add the garlic and spices to the blackberry puree and mix thoroughly.
Step 4
Cut the cooled chicken into small serving pieces, transfer them to a deep bowl, and pour over the blackberry sauce. Gently toss the meat to combine.
Step 5
Allow the meat to marinate for at least ten to fifteen minutes, or preferably overnight in the refrigerator. Arrange the chilled pieces of meat on plates and serve.
