- Lemon - 1 piece
- Poultry - 2 lbs
- Herbs - 1 bunch
- Rosemary - 1 teaspoon
- Anchovies - 3 pieces
- Capers - 2 tablespoons
- Olives stuffed with lemon - 1.8 oz
- Passata Tomato Sauce - 3 tablespoons
- Garlic - 2 cloves
- Olive Oil - 6 tablespoons
- Salt - to taste
- Apple Wine - 5 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the prepared chicken into pieces and marinate. For the marinade, mix the oil with rosemary and minced garlic, grated lemon zest, salt, and pepper. Leave the chicken for 30 minutes.
Step 2
Sauté the chicken, add the tomato paste, wine, and simmer for 20 minutes. Add the chopped anchovies, olives, and capers. Leave for a few more minutes.
Step 3
Sprinkle the finished chicken with chopped herbs.
