Ingredients
- Poultry - 1 piece
- Butter - 7.1 oz
- Green peppercorns - 1 tablespoon
- Lemon - 2 pieces
- Garlic - 4 cloves
- Parsley - 1.8 oz
- Salt - to taste
- Thyme - 12 sprigs
- Vegetable Oil - 1 fl oz
Step by Step guide
Step 1
Remove the wishbone from the chicken and cut off the tail.
Step 2
Gently insert your fingers under the skin of the breast and, using a careful motion, gradually create a large pocket by separating the skin from the meat as much as possible.
Step 3
In a mortar, crush black pepper, add the zest of two lemons, peeled garlic cloves, and use the pestle to turn everything into a paste.
Step 4
Mix room temperature butter with the paste made from peppers, garlic, and zest. Add the juice of two lemons, finely chopped parsley, and a pinch of salt, and mix thoroughly again.
Step 5
Distribute the butter under the chicken skin, coating the meat. You can reserve a little butter to grease the inside of the bird. Season with salt.
Step 6
Sauté the chicken in vegetable oil until it forms a delicious golden crust.
Step 7
Then place it in the oven preheated to 392°F for thirty to forty minutes. Toss a dozen sprigs of thyme onto the baking sheet.
