Chicken with Ham and Basil
Ingredients
- Skin-On Chicken Breasts - 12 pieces
- Yogurt powder - 17 fl oz
- Parma Ham - 12 pieces
- Fresh basil leaves - 24 pieces
- Lemon - 1 piece
- Garlic - 4 cloves
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Lightly pound the chicken breast and marinate it in a mixture of yogurt, crushed garlic, lemon juice, olive oil, salt, and pepper. The marinade yields good results after just one hour, but for the best outcome, it's better to wait three hours.
Step 2
Remove the chicken from the marinade and place a leaf of fresh basil in the center of each fillet piece. On top of the basil, add a thin slice of Parma ham, and then place another basil leaf on top of the ham. Fold the edges of the fillet to create something resembling an envelope, and grill all the chicken envelopes on both sides. Be careful not to overcook them, as the yogurt will start to burn. Grill just enough to impart a roasted flavor to the meat and achieve the characteristic black grill marks on the surface of the fillet. These marks somehow add an elegance to the dish.
Step 3
After frying the chicken, transfer all twelve pieces to a baking tray and place them in an oven preheated to 356°F for twenty minutes. Stuffed tomatoes can be served as a side dish with the chicken.
