Chicken with Lime and Cilantro
Ingredients
- Grated Ginger Root - 3 teaspoons
- Cilantro - 0.9 oz
- Orange zest - 1½ teaspoons
- Lime Juice - 4 tablespoons
- Skin-On Chicken Breasts - 4 pieces
- Jasmine Rice - 8.8 oz
- Courgette - 3 pieces
- Vegetable Oil - 2 tablespoons
- Porcini Mushrooms - 4 pieces
- Spices - to taste
- Salt - to taste
Step by Step guide
Step 1
Mix the ginger, cilantro, lime zest, and 2 tablespoons of lime juice. Spread 2 teaspoons of the mixture on each piece of chicken and sprinkle with spices and salt. Marinate for 1 hour. Mix the remaining mixture with the leftover lime juice for the dressing.
Step 2
Bring water to a boil in a large pot. Add the rice and cook for 15 minutes, stirring occasionally. Drain.
Step 3
Meanwhile, preheat the grill and lightly grease it with oil. Brush the sliced zucchini and mushrooms with the remaining oil. Place the chicken on the grill and cook for 4–5 minutes on each side. Add the vegetables to the grill 5 minutes before the chicken is done, turning them a few times. Transfer to a plate and cover with foil until serving.
Step 4
Divide the rice into 4 small bowls. Cut the chicken into small strips and place on the rice. Mix the dressing and drizzle over the chicken. Serve with the vegetables.
