Description

When serving the dish, drizzle the chicken with a little honey and add slices of fresh mandarins. This dish is perfect for any festive table. You can also sprinkle grated zest on top.

Ingredients

  • Poultry - 1 piece
  • Mandarins - 6 pieces
  • Red Curry Powder - 1 tablespoon
  • Honey - 2 teaspoons
  • Safflower Oil - 0.5 tablespoon
  • Salt - a pinch
  • Water - 2 cups

Step by Step guide

Step 1

Take the chicken (you can use half) and wash it thoroughly with water.

Step 2

Make the marinade. Take a bowl, squeeze the juice of five mandarins into it (you can use more or less depending on the size of the chicken or the mandarins), leaving the pulp in the bowl. Add one tablespoon of curry and two teaspoons of honey. Mix well. Add salt to taste. Grate the mandarin peel and add it to the marinade as well. Pour the marinade over the chicken, stuffing it with the pulp (or with 1-2 pieces of peeled fresh mandarin). Leave it for 2 hours.

Step 3

Grease a baking sheet with half a tablespoon of sunflower oil. Remove the chicken from the marinade and place it on the baking sheet (leave the pulp/mandarins inside). Drizzle the chicken with the marinade again and pour 2-3 cups of water into the baking sheet.

Step 4

Place in an oven preheated to 392°F. Cook for about 1 to 1.5 hours.
