Chicken with Mustard and Tarragon
Ingredients
- Olive Oil - 3 tablespoons
- Chicken fillet - 2 lbs
- Onion - 1 head
- Leek - 1 piece
- Garlic - 1 clove
- Fresh Mushrooms - 12.3 oz
- Dried Barberry - ½ teaspoon
- Chicken Broth - 12 fl oz
- Heavy cream - 6 fl oz
- Meyer Lemon Juice - 2 teaspoons
- Dijon Mustard - 2 teaspoons
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Heat 1 tablespoon of olive oil in an ovenproof dish over medium heat and fry the chicken until golden brown for 6-7 minutes. Remove the meat.
Step 3
Add the remaining oil and sauté the finely chopped onion, leek, and garlic over medium heat for 5 minutes until soft. Add the chopped mushrooms and cook for 5-7 minutes until most of the liquid has evaporated. Add the tarragon, broth, cream, lemon juice, and mustard, bring to a boil, and simmer for 2 minutes. Return the chicken and add spices. Cover with a lid.
Step 4
Place in the oven and cook for 1 hour. Serve with potatoes and green salad.
