Description
For the chicken, we chose feta cheese, olives, canned diced tomatoes, oregano, and olive oil — all staples of traditional Greek cuisine. First, the chicken needs to be seared until it develops a nice crust, and then it is immersed in a fragrant sauce. We used Kalamata olives — the most distinguished Greek olives, but if you don't have Kalamatas specifically, feel free to use any other variety that resembles them as closely as possible.

- Chicken Thighs - 31.7 oz
- Onion - 5.3 oz
- Garlic - 2 cloves
- Canned Tomatoes (Pelati) - 14.1 oz
- Kalamata olives - 4.6 oz
- Red Grape Juice - 4 fl oz
- Dried Rosemary - 2 spoons
- Salt - to taste
- Feta cheese - 3.5 oz
- Ground Black Pepper - to taste
- Vegetable Oil - 1 tablespoon
- Olive Oil - 1 tablespoon
- Orzo Pasta - 7.1 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Season the chicken thighs with salt and pepper.
Step 3
Heat a mixture of olive oil and another vegetable oil in a large skillet over medium-high heat. Sear the chicken thighs, skin side down, until golden brown—about 4 minutes on each side.
Step 4
Transfer the chicken to a plate and drizzle with 2 tablespoons of the mixture of oil and fat that has formed in the pan.
Step 5
Coarsely chop the onion and 2 large cloves of garlic.
Step 6
Slice the olives into thick rings.
Step 7
Sauté the onion in the same skillet used for the chicken over medium heat for 3 minutes, then add the garlic and continue to cook, stirring, for another minute until a strong garlic aroma develops.

Add the canned tomatoes along with their juice, olives, red wine, and oregano to the skillet with the onions and garlic.
Step 9
Add the chicken to the vegetables. Bring the sauce to a boil, then lower the heat, cover the pan, and let it simmer for about 25 minutes, until the chicken is fully cooked.

Arrange the chicken thighs on plates, drizzle with the tomato-olive sauce, sprinkle with crumbled feta, and serve alongside orzo pasta (following the package instructions).
