- Skin-On Chicken Breasts - 2 pieces
- Grated Ginger Root - 2 teaspoons
- Palm Sugar - 1 tablespoon
- Mild Chili Spice - 1 piece
- Toasted Cumin Seeds - ½ teaspoon
- Peanut Sprouts - 3 oz
- Green Papaya - 1 piece
- Courgette - 1 piece
- Shallot - 2 pieces
- Spanish onions - 1 head

First, fry the chicken fillet using any convenient method.

Now let's prepare the sauce. For this, place grated ginger, crushed palm sugar, previously roasted and ground cumin seeds, deseeded and finely chopped large chili pepper, and add soy sauce into a large bowl. Mix until the sugar completely dissolves. Add the fried chicken breast fillet to the sauce and mix everything thoroughly again.
Step 3
In another bowl, prepare the salad: mix the previously peeled and roasted peanuts, peeled and deseeded coarsely chopped papaya, diced cucumber, previously chopped and roasted red onion, chopped shallots, and mint. Add salt and pepper to taste.

Then, remove the chicken breast from the sauce, place it on a plate along with the papaya salad, and drizzle the resulting dish with the sauce.
