Chicken with Pear and Blue Cheese
Ingredients
- Poultry - 4 pieces
- Fresh Rose Hips - 1.1 oz
- Garlic - 5 cloves
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Pears - 1 piece
- Pistachios - 3.5 oz
- Honey - 2.5 oz
- Goat cheese - 8.8 oz
Step by Step guide
Step 1
Prepare the filling. Peel and core the pear, then slice it.
Step 2
Lightly toast the pine nuts in a dry skillet and mix them with the pear slices and honey. Cut the Gorgonzola cheese into small cubes and gently combine it with the pear and nut mixture.
Step 3
Clean the chickens and remove any remaining feathers, then rinse well. Rub the chickens inside and out with salt and pepper, and fill them with the prepared filling.
Step 4
Cross the legs at the breast and secure them with kitchen twine or wooden skewers.
Step 5
Place the prepared chickens on a baking sheet with rosemary and garlic, drizzle with olive oil, and bake in the oven at 180 °C (350 °F) for 45–50 minutes, basting occasionally with the fat that renders during cooking.
Step 6
Remove the chickens from the oven and take out the twine or skewers.
Step 7
Serve the cooked chickens on plates, garnish with fresh rosemary, and drizzle with olive oil.
